Spicy Breakfast Bake

Ingredients for Bloody Base

  • 6-8 eggs

  • 1 bell pepper

  • ½ medium white onion

  • 4 slices of thick bacon

  • 1 cup of shredded cheddar cheese

  • 3-4 good handfuls of spinach or spinach/kale mix

  • 3-4 wedges of Laughing Cow original cheese

  • 3 Tsp. Cavender’s Greek Seasoning

  • 1 tin of buttermilk flaky biscuits

  • 1-2 Tbsp. Pepper Sauce Rouge (or Pepper Sauce Fantôme)

Directions

  • Preheat oven to 375°

  • Chop the onions and bell peppers and set aside.

  • Use scissors to snip the bacon into ½ inch “bits”. Wash the scissors well because you’ll be using them again.

  • Cook the bacon in a skillet over medium heat until just done. You don’t want it to be crispy because you’ll be baking it, as well.

  • Remove the bacon and let it drain on a paper towel. In the same skillet, sauté the peppers and onions until they’re done to your taste. (Some people like them still crunchy others like them just about mushy.)

  • In a large glass bowl, whisk together all of the eggs.

  • Take the biscuits and laughing cow out of the refrigerator. Use the scissors to cut each biscuit into 6 triangular pieces. Also, cute the Laughing Cow wedges into small bits. This is easier done when both of these are cold.

  • Add everything---seasonings, hot sauce, cheeses, veggies, biscuits, and meat---into the egg mixture. Begin gently folding the mixture so that everything is incorporated well and the biscuits are coated.

  • Use non-stick spray or butter to grease a baking or casserole dish. (I used an 8x8).

  • Pour the mixture from the glass bowl into the baking dish and check on it in 25 minutes.

  • Make sure the edges aren’t burning, if they begin to get too brown then cover the edges with aluminum foil and they won’t continue to brown.

  • Continue cooking until the center is set. There will still be some moisture but a butter knife or toothpick in the center should come out clean.

  • Serve with hot sauce on the table for those who like it extra spicy.
